Sour Cream Bacon Bits Baked Potato

A bunch of us were at a steak house last week trying to decide what to order when the chef came out from the kitchen and suggested we try his baked potato speciality of the day. We all agreed to have the special potato of the day added to our steak and seafood entrees and we waited in anticipation to find out what the chef’s super baked potato would be like. About fifteen minutes after we’d eaten our salads the main meal was served and to our delight the potato was perfect. The chef had taken the potato out of the skin and mixed it with butter, sour cream with chives, bacon and some fresh off the cob sweet corn, he then added butter and chives to the baked potato skins and placed them on the plate. We all agreed these were the best potatoes we had ever eaten.
